Happy Birthday LuLu!!!



This past weekend, we celebrated my little LuLu's 8th birthday!!! It's amazing how quick time is just flying by! It seems like just yesterday she was a baby. We've come a long way kiddo.

The weekend starts off with a birthday celebration that we do every year. On Febraury 26th, me and the girls go out and eat at Greek Islands West and celebrate Corliss' birthday. As her birthday is 2 days prior to Lexi's. The 3 of us have done this for the last 6 years and I can't really see us changing anything too soon. It was Corliss favorite place to eat, as she just loved getting a bunch of everything and have a feast! I am fortunate that my girls love Greek food, so we can still enjoy coming to their mommies favorite restaurant. Opaa!

Lexi's birthday is also the end of a long month for me, as there are a lot of meaningful dates for me in February. So I for one am ready for a party!!! This year, we went out to Dubuque, Iowa and to the Grand Harbor Resort and Waterpark. This is the resort that we have come the last 2 years for the Dubuque BBQ contest. Steve Geisz, who runs the BBQ contest is also the GM for the Resort and he really took care of the girls. We had a great weekend splashing around in nice warm water, while it was freezing cold outside. We didn't get to do as much as we wanted, as we were battling a nasty cold, but the girls had a real good time! We also got to go to the National Mississippi River Museum and Aquarium. The girls were just amazed at the fish swimming around in the big tank! As Lexi said, "that catfish could eat me!" We left on Sunday and enjoyed a beautiful drive home. That part of NW Illinois is just gorgeous! I love that drive!

A new CBJ class


This past weekend, I had the pleasure of heading out to Shannon, Illinois to assist Mike and Theresa Lake with a KCBS Certified Barbecue Judge Class that they were putting on. Mike is the President of KCBS and he and Theresa run one of the best contests out there, The Illinois State BBQ Championships in Shannon. There were a total of 33 brave new CBJ's in this class, as the Northern Illinois region was getting hit with a real good snow storm. Amazing the determination of folks for their love of BBQ! The main reason I was going out for this class was so my sister, Liz Anne, who is usually out with us competing, could take the class and become a CBJ. So if anyone happens to have a straw hat and pink suspenders, it would be a gift she would treasure for years to come!!! ;-)

Results from Auction!!!


I've seen a lot of stuff in my life, but sometimes folks really surprise me. The results from the eBay auction that I set up for 5 KCBS contest entries is over. The 5 auctions brought in almost $950!!! A couple of the contests actually sold for more than the entry fee. So I just wanted to thank all that won the bids and all of those that were doing the bidding!!! Know that 100% of the proceeds will be going to fight this terrible disease.

Winter Burnoff


I went out and washed dishes with Alex Cothell from Dr. Porkenstein on Sunday for the annual Winter Burnoff. As you can tell by the singed arm, I forgot how hot Big Green Eggs can get!!! The name of the contest is in no reference to me trying to burn all of the hair off of my arm! Keith from KRE Smokers organizes the event as a fund-raiser for NOAH, the National Organization for Albinism Hypopigmentation. I believe this is the 4th Annual and it's a lot of fun to see everyone in the middle of winter. This year it was a balmy 30 degrees, which was a stark contrast to last year, when it was -4º and with the windchill, it was -30º.

This contest is a very laid-back contest. As you can see by the pictures, everyone was rushing up to be photgraphed with Jasper!!!



The Overall Grand Champions were my boys from Porkrastinators, Scott Hettinga and Seth McCallister . Way to go go guys!!!

The BBQ World has lost a friend. Monica Benedict of Odis and the Bird out of Mesa, Arizona lost her courageous battle with cancer.

KCBS Banquet, Nashville, Tennessee

This past weekend, my sister and I drove down to the KCBS banquet in Nashville, Tennessee. I was driving because I had to pick up a barrel that Marsha Russell was bringing me from Lynchburg. I am going to use it as a stand for my Jack trophy. My boy Podge, from Moonswiners gave me the idea. My ceilings in my family room weren't tall enough for a full barrel, so that is why I got a half one. It turned out nice and I will post pictures of it, once I get my camera to be able to download. Ah the joys of not having enough time in the day!

But back on topic. This was the first time that the annual KCBS banquet was outside of Kansas City. So in that sense it was different for me. We tried to go to Prince's Chicken for lunch. I'm not going to post a link, as we were not able to eat lunch there, as they didn't open until 2:00 pm!!! So much for our 12:30 lunch. Liz Anne and I headed over to the hotel for check in and get a little rest after the 7 hour drive. Instead we got to meet and greet folks in the lobby and then over in the KCBS hospitality room. Where we were able to purchase our tickets for the contests raffle. More on the raffle later.

We headed down to the banquet for cocktails. Went to get a cocktail to find out that they were not serving Jack Daniel's!!! Only that stuff from Kentucky... I hated to do it to the bartenders, but I had to pull out my Squires card and get the banquet manager over. Let's just say that we were able to drink Jack in the state that makes it famous....



My team had a great 2008 season. We were fortunate enough to win 5 Grand Championships and 4 Reserve Grand Championships last year. We were honored with a 8th place medal in Overall for KCBS Team of the Year. I've got to say, it's pretty cool. I never thought that I would ever be in that position. I will cherish it right up there with my Jack trophy. I guess you have to say that you will do better next year, but that is easier said than done. But I know I will give it a go!!!



Back to the contest raffle. It is one of the highlights for the banquet for me. I love the trading and seeing who is going where and meeting new people and buying/trading entries. I was able to get 11 entries for contests this year. I was lucky enough to win some contests that I was planning on going to and then buying some from folks too. I got some good deals on some trades and I gave away a few too, just because it was for friends.



I'd be remiss if I didn't mention that Dr. Dave Covington from Minnesota, donated 5 contest entries for me to try and raise some money for my foundation. I'll do something with them on eBay and hopefully we will be able to raise some additional funds. Know your dad is smiling Dave. I thank you.

Felda, Florida

I must say, this is my second year heading down to the swamp for New Years and it is a awesome way to bring in the New Year! Buddy Taylor and Jenna Borkert at Gator Hammock really put on a cooks friendly event! We are fortunate that we have friends in Bonita Springs area and go down and spend some time with them, then head over to the contest.


We pulled in on New Year's Eve around noon. We drive over 1300 miles and who are we next to? Another Illinois team, Beth and Mike Wozniak of Quau. The other teams must of been scratching their heads. The contest had 27 teams there besides us. Jack's Old South, Swamp Boys BBQ, Bill and the Dixie Chick and Florida Skin and Bones were some of the other teams there.


The weather was perfect this year. It was in the 80's the whole week we were down in Florida. Couldn't ask for much better. Sure was better than last year, when we had some night time lows in the low 40's. Which is really cold for Florida weather. I know it sure puts a chill through to your bones!


The contest was different for me. It was only about 6 weeks for me since my last cook, but I just felt like I hadn't cooked for years! Funny how some time off and you can forget what you do for your turn-ins! Fortunately, every year after the season ends, I write down all of my recipes, just because I know I will forget the finer points! It all started coming back to me during crunch time though.


As for the contest. We had a good showing when we were called for 2nd place chicken. Sure is nice starting a contest with a call in chicken. Amazing that I have been fighting this category for so long. Now it just seems so easy. It was also nice beating the KCBS chicken cook of the year too! As Mr. Quau was 3rd place.


We had another strong call with our ribs. Another 2nd place call! Which surprised me, as I thought they were a bit dry, but the texture was right on. The smack talk continued, as Quau beat me by less than a fraction of a point for the rib title! I should of kept quiet for the chicken results!


Pork ended up in 9th place. I felt like it was my best product of the day, the judges didn't. Oh well, we move on and try again next time we cook! I've learned that you can't kick yourself if your product doesn't finish where you think it should. As we sure don't give back our awards if we get a higher call! See my ribs scores...


Brisket I thought was slightly overdone. The judges seemed to like it and we got a fourth place call. I think my girls sprinted up for that award, as they really like to do that. I'm usually just getting out of my chair and they are already gone... They need to learn to wait for their old man! lol






In the overall we managed to get Reserve Grand Champion. It was a great way to start the year! Swamp Boys BBQ took home the coveted gator trophy! This thing was just huge! It had to of been over 9 feet long! I almost feel fortunate that my GC trophy from last year was slightly more manageable to get home! I've got to say that Rub is probably one of the nicer guys out on the circuit. He is a good spokesman for Florida BBQ and some day I told him I would be back to cook in a FBA event. Maybe when he isn't so hot!!!

We don't have another contest scheduled until Little Rock in March. My sister Liz Anne and I will be heading to Shannon, Illinois in February, so she can become a certified BBQ judge. It should give her a better idea of what goes on in the judging room. I'll be washing the dishes in the back to help out Mike and Theresa Lake.
